Matthew LaPlante started 1833 Craft out of frustration with the alcohol-free options he encountered elsewhere. The bar's philosophy, as his sister Kelly puts it, is to not make non-alcoholic spirits behave like alcoholic ones, but to enjoy and appreciate them for what they are.
The crowd, the owners say, is a mix of people who have never drunk alcohol, those taking a break, those who don't want a weeknight hangover, and those in recovery. The signature "Bartender's Affections" pour invites guests to share three words and receive a custom drink built on the spot, and the seasonal menu rotates regularly. Hours are intentionally limited — Thursday and Friday, 5 to 10 p.m. — with other times by special request.
