Matthew LaPlante started 1833 Craft out of frustration with the alcohol-free options he encountered elsewhere. The bar's philosophy, as his sister Kelly puts it, is to not make non-alcoholic spirits behave like alcoholic ones, but to enjoy and appreciate them for what they are.

The crowd, the owners say, is a mix of people who have never drunk alcohol, those taking a break, those who don't want a weeknight hangover, and those in recovery. The signature "Bartender's Affections" pour invites guests to share three words and receive a custom drink built on the spot, and the seasonal menu rotates regularly. Hours are intentionally limited — Thursday and Friday, 5 to 10 p.m. — with other times by special request.

What to order

  • The LBGT (lavender-juniper NA gin & tonic)
  • Libre Libre (herbal cola, dark cane, lime, hydroponic mint)
  • Cinnamon Espresso Martini
  • The Bartender's Affections (give three words, get a custom drink)
We'd go out and the non-alcoholic cocktails on the menu, the mocktails on the menu, were just terrible. They just were not very exciting. They always left me disappointed.
