Rosa Sky occupies the 22nd floor of the dual-brand AC & Element Hotel Miami Downtown in Brickell, opened in 2022, and trades on what a 22nd-floor room in Brickell trades on: panoramic skyline views, globally inspired tapas, DJ-driven evenings and a Sunday Soiree bottomless brunch.
Rooftop bars are a difficult category for non-drinkers. The economics reward volume and speed, the menus lean frozen and sweet, and the alcohol-free option is usually whatever comes out of the soda gun. Rosa Sky instead runs a compact but ingredient-specific zero-proof section built on Ritual Zero Proof spirit alternatives and Giffard syrups — the same syrup house used on the full cocktail list, which is the detail that shows the two menus share a station rather than running in parallel.
Feeling Frisky is the Ritual Whiskey Alternative with Giffard ginger and lemon. Rooftop Retreat uses the Ritual Tequila Alternative with Giffard pineapple, basil, coconut water and citrus. Pom Pom takes the Ritual Gin Alternative into pomegranate, vanilla and citrus. Three drinks on three different alcohol-free base spirits is a stocked bar rather than a gesture.
The Pom Pom also appears as a zero-proof pour during the bottomless brunch, which is the practically important part: bottomless formats are where non-drinkers usually pay full price for orange juice, and having a named cocktail included changes the arithmetic of joining.
The Greater Miami Convention & Visitors Bureau picked out the Feeling Frisky as a bold, ginger-forward mocktail. It is a full-service rooftop rather than a dedicated NA venue, and it gets busy and loud after dark — but the mocktails are real and specific rather than improvised. Go early if the view is the reason — the room fills after dark and the DJ takes over the volume.
