The Chapman opened on Park Avenue with a fin-de-siecle theme that, according to Artistry Restaurants chief concept officer Daniel Harf, was inspired by 'the style, architecture and romance of the Seminole Hotel, the history of the neighborhood, and how it offered a winter respite for Northerners.' The space honors Winter Park's founding fathers, Loring Augustus Chase and Oliver Everett Chapman, across both the main dining room and its attached Chase Lounge bar.
The Chapman and Chase Lounge opened with a soft launch of dinner service on January 20, 2025, with full lunch, brunch, and dinner menus following in early February 2025. The concept is part of Artistry Restaurants, founded by Barry Goff (whose son, Mitch Goff, serves as executive vice president); the project was reportedly first initiated by the Holler family roughly three years before opening.
Menu development was overseen by Clifford Pleau, a Culinary Institute of America graduate who was the opening-day chef of Disney's California Grill in 1994 and later spent 12 years creating concepts for Darden, including Seasons 52. Executive Chef Ibis Lopez sources proteins from family-run farms including Joyce Farms, Cheshire Farms, and Kvarøy Arctic, always featuring a fresh Florida catch of the day.
Beyond the Chase Lounge's classic and old-fashioned cocktail list, The Chapman's zero-proof offerings include the Winter Park Vice (hibiscus, coconut cream, pineapple, lime, toasted coconut) and the Gentle Breeze (blood orange, fassionola, lemon, vanilla, ginger beer).
