    Shibam Coffee opened on Lancaster Avenue in West Philadelphia on the first Friday of Ramadan in February 2026, the first Philadelphia site for a Yemeni chain that runs thirteen locations nationally. It trades until midnight on Friday and Saturday and ten every other night, and its Instagram bio states plainly that everything on the menu is halal. The drinks are the Yemeni canon done properly: jubani made with coffee and coffee-cherry husks served with cardamom, ginger and cinnamon; adeni, a Yemeni black tea with cardamom, nutmeg and milk; mofawar, coffee with cardamom and cream; the house Shibam coffee, a light roast with husks, cardamom, ginger, cinnamon and cream; and a Saudi coffee with cardamom and saffron. The Zero Proof Ginger Spritz at $13 is built on Ghia, the bitter Mediterranean aperitivo whose gentian and elderflower give it genuine astringency. The Zero Proof Chili Margarita, also $13, uses Aplós — an alcohol-free spirit made with adaptogens — against Persian lime, habanero and sea salt. Both are priced level with the bar's alcoholic cocktails, which is a deliberate statement about the labour involved. The room runs to midnight on Friday and opens at ten on Sunday.
