The Cowfish Sushi Burger Bar is a three-story, sushi-and-burger hybrid restaurant at Universal CityWalk that serves both gourmet burgers and made-to-order sushi - including its signature 'Burgushi' rolls that combine burger ingredients into sushi form. It sits at 6000 Universal Boulevard (Suite 700) in Orlando, along the entrance corridor between Universal Studios Florida and Islands of Adventure, with second- and third-floor dining rooms overlooking CityWalk.
The concept was founded in 2010 in Charlotte, North Carolina by Marcus Hall and Alan Springate, who combined two separate restaurant ideas - one sushi, one burgers - into a single menu. The Universal Orlando location, the brand's first inside a theme-park complex, officially opened at CityWalk in December 2014; a further location later opened at Universal Beijing Resort's CityWalk.
Its zero-proof drink list includes Thyme After Time (thyme-infused simple syrup, lemon, muddled blueberries, Gosling's ginger beer), inspired by then-general-manager Aaron Tang's grandmother's blueberry thyme tart recipe; the Dragon Fruit Spritz (dragon fruit, lemongrass syrup, SanPellegrino Aranciata Rossa, lemon juice, Gosling's ginger beer); and the Pineapple Princess (pineapple, yuzu, lemonade, SanPellegrino Aranciata). Tang told Universal's own Discover Universal blog that the team wanted 'something more elevated that is meant for grown-ups but does not have alcohol' - the mocktails are presented as a distinct section of the drink menu rather than an off-menu request, giving non-drinking guests a built-in reason to stop at CityWalk on the way in or out of the parks.
As with most CityWalk restaurants, closing time shifts seasonally with the complex's overall operating hours.
