Kaya brings modern Filipino cooking to Orlando's Mills 50 district, led by chef Lordfer Lalicon, who trained under two-Michelin-star, Green Star chef Dan Barber at Blue Hill at Stone Barns, alongside co-founder Jamilyn Bailey. In April 2024, Kaya became the first restaurant in Florida to receive a Michelin Green Star, recognizing its sustainable sourcing (roughly 90% of produce comes from Central Florida farms) alongside its MICHELIN Guide recognition; it has also been a James Beard Award finalist for Best New Restaurant.

Kaya's bar program treats zero-proof drinkers as first-class guests rather than an afterthought, with five named non-alcoholic cocktails on the regular menu: Hiraya, Honey Ko, Risoma, Pandan Cream Soda, and Salabat, a hot ginger tea. The flavors mirror the kitchen's approach, built from Filipino pantry staples like pandan, kalamansi, and shio goji rather than treated as simplified versions of the alcoholic list.

'A lot of what we do is trying to show what's possible in the restaurant industry,' co-founder Jamilyn Bailey has said of Kaya's minimal-waste, ingredient-forward philosophy, one that extends from the kitchen's cooking scraps to a bar program built to stand fully on its own, alcohol or not.
