Kupros Craft House occupies a converted house on 21st Street in Midtown Sacramento, and its non-alcoholic offering is deeper than almost anything else in the city because it is built on stocked product rather than improvisation.

The bar carries Lyre's, one of the more established non-alcoholic spirit ranges, and uses it across several drinks. The Old Fashioned is the one that demonstrates commitment. Strip an Old Fashioned to its parts and you have spirit, sugar, bitters and ice — no citrus, no mixer, nothing to hide behind. Whatever replaces the whiskey is completely exposed, which is why most bars will not attempt one and why offering it is a genuine claim. The mojito is the easier build, since mint, lime and sugar carry most of its character anyway.

The espresso martini mocktail is smart menu design for a different reason: the alcoholic original is already dominated by coffee, so the vodka contributes texture more than flavour, and a well-made zero-proof version loses very little. The White Linen variation with elderflower covers the floral, lighter end.

Hop waters deserve a mention too. They are sparkling water dry-hopped with the same aromatic hops used in IPAs — bitter, citrusy, and completely alcohol-free — and they solve the specific problem of wanting something that tastes like a beer garden without the beer.

The hours are the best in this guide: open from noon most days, 10am at weekends, and running to 1:30am on Friday and Saturday. In a city where much of the alcohol-free provision closes by ten, a Midtown bar with Lyre's behind the counter serving past one is genuinely useful.

A note on what Lyre's actually is, since the category confuses people. It is a range of distilled non-alcoholic spirits built to match the flavour profiles of gin, whisky, amaretto and the rest — botanicals and extracts assembled to hit the same notes, with no ethanol. It is not a perfect substitute; nothing replaces the warmth and weight alcohol gives a drink. What it does deliver is the aromatic structure, so a cocktail built on it tastes like a version of the original rather than like fruit juice. For a bar, stocking it is a real cost with a single purpose, and that purchasing decision is the most reliable signal there is of a genuine programme.
