Mar | Muntanya debuted in October 2022 as the rooftop dining centerpiece of the Hyatt Regency Salt Lake City, on West Temple near the convention center and Salt Palace. Executive chef Tyson Peterson — known in Utah for Spanish-themed concepts — builds the menu around the Basque and Catalan regions, from campfire elk loin to shareable tapas.
The beverage program centers on Spanish gin-and-tonic service with house-made tonics, and its cocktail-hour menu (Wed–Sat, 2:30–5pm) keeps non-drinkers in mind: an $8 non-alcoholic sangria built on cranberry, citrus and seasonal fruit sits alongside the wine-based sangrias, plus a rotating $8 mocktail.
