Pacific Cocktail Haven (PCH)

Pacific Cocktail Haven, universally shortened to PCH, opened in 2016 under bartender Kevin Diedrich and has become one of the most decorated bars in the United States. Its drinks lean on Asian-Pacific ingredients that reflect Diedrich's Filipino heritage, and the room draws a mix of industry regulars and Union Square visitors. In February 2021 a fire destroyed the original space; the bar reopened in March 2022 at 550 Sutter Street, a few doors from where it started. It has won Best American Cocktail Bar at the Tales of the Cocktail Spirited Awards, appears regularly on North America's 50 Best Bars, and climbed to No. 16 on that list in 2025. It opens at 5pm Monday to Saturday and is closed Sundays.

The menu is organised by base spirit, with non-alcoholic drinks given their own standing section rather than a line at the bottom, and the bar will build a spirit-free version of nearly anything else on the list on request — which in a room this decorated is the more valuable offer, because it means a non-drinker is not restricted to three choices. Named zero-proof pours currently include Raisin da Roof, built on Lyre's non-alcoholic gin and Lyre's dry aperitif with raisin, orange and apple cider vinegar; Karl the POG, which combines Seedlip Spice with the bar's house passionfruit-orange-guava blend, orgeat, citrus and ginger beer; and Cactus Makes Perfect, made with nopales water, jicama and sakura. The vinegar in the first and the ginger beer in the second are doing the same job — supplying the bite and length that alcohol normally provides — and they are the reason these read as cocktails rather than as juice. The Infatuation, in its guide to drinking in San Francisco without alcohol, singled the bar out: "Pacific Cocktail Haven dedicates a portion of their menu to non-alcoholic options, including a N/A gin-based concoction with raisins, orange, and apple cider vinegar."
