The Polished Pigeon opened on 6 February 2026 in the former lounge of Black & Grey Atelier, an appointment-only tattoo studio on the ground floor of the Form 15 apartments at 1450 Market Street, and it is the second bar in San Diego where no alcohol is served at all. The founders, Kaylee and Crystal Clark, previously built the identity of the city's first alcohol-free bar in Hillcrest before a public falling-out with its majority owner; the local trade site SanDiegoVille covered the opening as the arrival of the city's second such room.
What matters on the ground is that the drinks list is deep and printed rather than improvised. The functional section runs nine builds between thirteen and fifteen dollars, each tagged for what it is meant to do: Breathe Easy and Basil Smash on aplós calme with CBD, The Glider and Clear Skies on a kava base, Wake Up Call and Spicy Piña under an uplift heading, The Pause on Sentia's GABA Red and Night ZZZ on Three Spirit's Nightcap under unwind. The house specials add six more at fifteen dollars, among them an espresso martini on Spiritless espresso liqueur and house cold brew, and a Golden Hour on Pentire Adrift with a house cordial. The spirit-free classics are exactly what the name says — old fashioned, manhattan, paloma, peach margarita, vanilla-lime gimlet and whiskey sour, built on non-alcoholic bourbon and tequila alternatives.
Beyond the cocktails there is non-alcoholic beer from Ted Segers, Good Liar and Gruvi, Gruvi red blend and Surely sparkling by the glass, three zero-zero shots at six dollars, and a four-pour kava flight at eighteen. The coffee side opens at eight every day it trades, which makes this one of the few rooms in the city that works for a morning meeting and an evening out without changing character.
Two things to know before you go. The bar serves kava and hemp-derived CBD alongside the alcohol-free drinks, both named plainly on the menu — no alcohol, but not free of every active ingredient, so read the tags if that matters to you. And the hours split: coffee and functional cocktails only on Tuesday and Wednesday until four, with the full bar running Thursday to Saturday until ten and Sunday until eight.
The programming is the other half of what this room is. The published calendar runs live music on weekend mornings, an open-stage drag show called The Aviary, a Sunday afternoon social, a women's codependency recovery meeting and a weekly women's group — the mix of nightlife and recovery support that a bar serving no alcohol can hold in one room and a licensed bar cannot. Collaborations with local coffee roasters and vendors fill the daytime slots. For anyone who has been looking for somewhere in San Diego to spend a Friday evening that is neither a bar nor a coffee shop closing at five, this is currently the answer in the east of downtown.
