Clockwork Champagne & Cocktails occupies the lobby lounge of the Fairmont Royal York at 100 Front Street West, opposite Union Station in downtown Toronto. The room is built around the hotel's storied clock — the source of the bar's name — and leans into Art Deco elegance, with live piano and DJ sets, a list of more than 96 champagnes, and refined small plates and seafood towers meant for sharing. Weekend Afternoon Tea runs Saturday and Sunday, 11:00 AM to 4:00 PM, by reservation only.
The bar's "Spirit Free" menu treats non-alcoholic drinking with the same care as its champagne list, building three named cocktails on Seedlip's distilled non-alcoholic spirits. Smoke on the Water pairs Seedlip Grove with ancho chili, cranberry, apple, maple, verjus, allspice and ginger ale ($17); Green Heat combines Seedlip Garden with cucumber-and-cilantro oleo, lemon, chili and smoked sesame ($19); and Spice Road mixes Seedlip Spice with masala chai, coconut, lime, pineapple, cardamom, nutmeg and mint ($18).
The beverage program is overseen by Director of Beverage James Grant, a World Class Global Bartender of the Year (2021) and Canada's 100 Best Bartender (2022). Canada's 100 Best has singled out the spirit-free cocktails as "designed to deliver the same complexity, balance, and sense of occasion as the classics," crafted in partnership with Seedlip.
