Coupes opened in early 2023 at The Shops of Highland Park, 4234 Oak Lawn Avenue, and was created by two champagne enthusiasts: Eric Chiappinelli, a law professor, and Amanda Hale, an attorney. Named for the coupe glass, the room is designed around bubbles, with a circular bar shaped like a coupe, custom mosaic tile, and lacquered Venetian plaster walls. The list runs to more than 100 labels of champagne and sparkling wine, with roughly 20 poured by the glass.

The non-alcoholic program leans on real zero-proof brands rather than syrup. The Resolution is built with Martini & Rossi Floreal, cranberry, lime, ginger beer, and orgeat, while the Sparkling Conviction pairs blood orange and lemon with Lyre's Classico and All the Bitter zero-proof aromatic bitters. The bar has also poured a non-alcoholic Aperol-style spritz as a spirit-free take on the classic. These builds were featured by CultureMap and PaperCity in their Dry January roundups, and reflect a bar that treats zero-proof drinks with the same care as its sparkling list.

Beyond the glass, Coupes offers small bites, caviar service, and brunch, and holds back a set of seats each evening for walk-in guests. It sits at the Oak Lawn edge of the Park Cities, minutes from Highland Park and Uptown.
