Maison Selby takes its name from the corner of Selby Street and Sherbourne Street, where the building it occupies has stood since 1883. It was built as a mansion for the Gooderham family - the Gooderhams of Gooderham & Worts, the distillery whose old works became Toronto's Distillery District - and has passed through several uses over its history before Oliver & Bonacini, the Toronto hospitality group behind Canoe and Auberge du Pommier, opened it in 2019 as Maison Selby: a French bistro, café and cocktail bar.

The restaurant occupies the historic mansion's rooms, including the private L'Orangerie dining room and a street-side patio. Service runs across lunch on weekdays, dinner nightly, weekend brunch, and daily takeout, with a basement bar, Bar Sous Sol, open Thursday through Saturday evenings for drinks.

The official menu lists a dedicated "Zero-proof Cocktails" section with five non-alcoholic drinks. The Fraîcheur d'Été mixes strawberry juice, lemon juice and cucumber ($10); the Pineapple Mule pairs pineapple and lime with Fever-Tree ginger beer ($10); and the Raspberry Pepper Mojito combines raspberry juice, raspberry pepper syrup, lime juice, mint and soda water ($10). Two sangrias round out the list: a Red Sangria made with Grüvi sangria, raspberry and hibiscus ($14), and a White Sangria built on JP. Chenet alcohol-free Chardonnay and white cranberry ($14).
