Simpl Things

Simpl Things is an all-day cocktail and snack bar on Dunn Ave in Toronto's Parkdale (South Parkdale) neighbourhood, with beverages curated by owner and beverage expert Evelyn Chick of Evelyn Chick Projects. The bar runs a dual-daypart concept — Italian comfort food by day, modern Asian snacks by evening — alongside handcrafted cocktails and natural wine, including a daily 3–5pm happy hour with $12 house cocktails and a Sunday discount on natural wines. It describes itself as "a cozy but vibrant space" built on the idea that "the moments that deliver the most joy in life are often simpl," and it has been named a "One to Watch" bar in North America's 50 Best Bars and listed among Canada's 100 Best Bars in 2025.

The printed drinks menu carries a dedicated "Zero Proof" section — tagged "non-alcoholic delights packed with flavour" — alongside the Simpl Legacy cocktail list, flights, and the wine and beer lists. It runs to five named, priced, fully ingredient-listed builds: the Rebel Without a Pour ($13, NOA Garden Gin, Martini Vibrante, simpl grenadine, acidified grapefruit), the After School Root Beer ($10, NOA Orange Liqueur, simpl Rootbeer syrup, Maison Perrier), the Power Lunch ($12, NOA Garden Gin & Sweet Vermouth, carrot, rice orgeat, NA Prosecco), the Feathered Dreams ($13, Seedlip Grove 42, Martini Floreale, Meyer lemon, aloe juice), and a Fin Soda Aperitivo ($10) of orange, raspberries, cane sugar and grapefruit — a canned aperitivo spritz from Montreal producer Fin Soda.

That program earned Simpl Things a place on Foodism.ca's roundup of Toronto's best mocktail and non-alcoholic drink menus, which credited Chick's zero-proof cocktails with "a level of skill and innovation that's cemented her reputation as one of the city's most talented beverage experts" — singling out a non-alcoholic tonic build as "crisp as pine needles and fresh as a mountain exhale" and the Fin Soda spritz as a nod to classic Italian aperitivo.
