Sago House

Sago House was created during Singapore's 2020 lockdown by three hospitality veterans - Desiree Jane Silva (formerly of 28 HongKong Street and EC Proof), Jay Gray and Abhishek 'George' C. What began three flights up on Sago Street relocated in 2023 to a shophouse at 37 Duxton Hill, where the room was built almost entirely by hand, roughly 80% of it from upcycled materials, and wrapped in a mural by local Filipino artist Distort Monsters.

The bar's signature is a menu that never sits still: six drinks built around six classic styles - a short-and-strong, a sour, a highball, a tiki drink, a tropical drink and a Champagne cocktail - all rebuilt weekly from ingredients sourced in the surrounding markets. That same market-driven, low-waste approach carries into its non-alcoholic drinks; the standout is the Yo Soy Elotes, a mocktail inspired by Mexican street corn that drinks like warm, buttered popcorn, and which reviewers have singled out as one of the more memorable zero-proof pours in the city.

The accolades are substantial: Sago House won the Michter's Art of Hospitality Award at Asia's 50 Best Bars in 2023, and has ranked highly on both Asia's 50 Best Bars (as high as No. 10) and the World's 50 Best Bars (No. 32). Despite the recognition it stays deliberately unpretentious - a convivial, party-first speakeasy where the non-alcoholic option is treated with the same creativity as the cocktails.

Because the list rotates every week, the exact alcohol-free drink on any given night will change, but Sago House consistently offers at least one thoughtfully made mocktail, so non-drinkers are catered to as a matter of course rather than on request.

The hospitality is the point, and it is the reason to send a non-drinker here rather than to a more technically decorated bar. Co-founder Desiree Jane Silva told The Peak Magazine that Sago House was never about making the best drinks or getting too geeky with it, and that the goal was to be friendly, approachable, and not make anyone feel intimidated. Asia's 50 Best Bars voters agreed in 2023, giving the room the Michter's Art of Hospitality Award — an award decided by naming the single bar where a voter had the best hospitality experience, with no other criteria attached.

That matters practically. The most common bad experience for someone not drinking is not a poor mocktail; it is the pause, the raised eyebrow, or the sense of having made the evening harder for everyone. A bar whose entire reputation rests on how guests are treated at the door is structurally unlikely to deliver that. Staff shout a greeting as guests walk in and write names on the tables in chalk, a habit that started because the week's drinks were already being written on the windows.

The trade-off is unpredictability. Six drinks are rebuilt every week around six classic shapes — strong up, strong down, daisies, highballs, sours and tropical drinks — from whatever the team finds in the surrounding markets, so the specific alcohol-free build changes constantly.
