Turner's Cut opened in June 2024 in Houston's Autry Park development, the newest steakhouse from Ben Berg's Berg Hospitality Group, which also runs Turner's, Prime 131 and B&B Butchers. Executive Chef Chelsea Cummings leads the kitchen with regional culinary director Pablo Peñalosa, serving rare cuts of American and Japanese wagyu and Kobe beef in a Gilded Age dining room of leather walls, soaring ceilings, antique chandeliers and white-glove service.
Despite a full bar and an extensive wine list, the restaurant runs a genuine named zero-proof programme at $12 a drink, and the compositions are more considered than a steakhouse needs them to be. The Strawberry Rose Refresher uses Seedlip Grove 42 — the citrus expression, built on blood orange, ginger and lemongrass — with strawberry rose syrup, simple syrup and Fever-Tree club soda. Spiced Pear switches to Seedlip Spice 94, the allspice-and-cardamom bottling with a long bark-like bitterness, against pear syrup, organic honey and Fever-Tree ginger beer; that is the one to order with beef, since the warm spice and ginger heat cut through fat the way a red wine's tannin would. Margfreerita is built on Cut Above's zero-proof agave blanco with mango syrup, agave and club soda, and the Kosnopolitan returns to Grove 42 with cranberry and fresh lime.
The use of two distinct Seedlip expressions rather than one bottle across the whole list is the tell. Each expression has a different botanical profile, and choosing between them per drink is the same decision a bartender makes between gin and whiskey — evidence the list was built rather than assembled.
CultureMap Houston, Bayou Beat News and Hot in Houston Now each independently confirmed the identical four-drink list during Dry January 2025 coverage, noting it is shared with sister restaurant Prime 131 across the group's beverage programme — which means the recipes are documented and trained rather than dependent on one bartender.
The restaurant sits in Autry Park, a fourteen-acre mixed-use development on the western edge of Buffalo Bayou Park at Allen Parkway and Shepherd Drive, bridging Montrose and River Oaks just west of downtown. Dinner only, Tuesday to Saturday.
