Epiphany opened at the end of 2022 on Highland Avenue in the Original Highlands, describing itself as a cocktail bar, brewery and spirits house built around bringing the farm-to-table idea into drinks. That premise is why its non-alcoholic drinks work: when the programme already runs on local produce, house syrups and infusions, removing the alcohol removes one ingredient rather than the whole structure. The alcohol-free list rotates seasonally. bar Vetti is an Italian restaurant and bar on East Market Street in NuLu, and it runs one of the most technically serious non-alcoholic lists in Louisville. Rather than sweetening juice, the bar rebuilds Italian aperitivo structure without alcohol: the N.A.-Groni is a zero-proof negroni using Ritual Zero Proof alongside Martini & Rossi Floreale and Vibrante, the two de-alcoholised vermouth-style aperitifs, and the Impostore Spritz and Bianca Spritz work the same bitter-and-bubbles register that the room's alcoholic list is built on. Seviche is chef Anthony Lamas's Latin restaurant on Bardstown Road in the Deer Park stretch of the Highlands, and one of Louisville's longest-standing serious kitchens — Lamas is a James Beard semifinalist and a familiar face from television. The bar makes a non-alcoholic mojito as standard and, more usefully, the staff will build a bespoke alcohol-free cocktail on request rather than pointing at the soft drinks.
