NuLu — the East Market District — is the stretch of Louisville that turned from warehouses into galleries and restaurants over the last fifteen years, and bar Vetti sits in the middle of it at 727 East Market. The cooking is Italian and the room is a proper restaurant bar rather than a cocktail den, which matters for how the non-alcoholic list is built: an Italian drinks programme starts from aperitivo, and aperitivo is a structure — bitter, aromatised, lengthened — rather than a specific bottle of alcohol. That structure survives de-alcoholisation better than almost anything else behind a bar.

So the N.A.-Groni is not a gesture. It reads as a negroni because it is assembled like one: Ritual Zero Proof standing in for the gin, and Martini & Rossi's Floreale and Vibrante — the de-alcoholised aperitifs the Italian house launched specifically to hold the vermouth and bitter positions — doing the rest. The Impostore Spritz and the Bianca Spritz work the same bitter-and-bubbles idea at a lighter proof-free weight. Behind them the bar keeps non-alcoholic beer from Athletic Brewing and from Lagunitas, so a table of mixed drinkers has real range rather than one token option. Practically, this is the most useful entry in the guide for a proper dinner without drinking. The kitchen runs nightly from 5pm, with midweek lunch and weekend brunch, and the pricing on the zero-proof drinks tracks the cocktails rather than sitting at soft-drink level — which is the correct signal that they are made to the same specification.
