Spiritless was founded here by three mothers who wanted their evenings without losing their mornings; its Kentucky 74, a reverse-distilled bourbon alternative, took Best Non-Alcoholic Spirit at the L.A. Spirits Awards and now turns up behind bars across the metro. So the zero-proof depth here lives inside ordinary rooms rather than dedicated ones.     The Merryweather is a neighbourhood bar on the corner of Lydia Street in Schnitzelburg, one of Louisville's older working-class German neighbourhoods on the south side. Its non-alcoholic programme is unusually committed for a corner bar: the standing Sober Ghia Spritz is built on Ghia, the gentian-and-yuzu Mediterranean aperitif, and each January the bar prints a full alcohol-free menu of its own — the Dry Tai, the Nada Colada, the Mock-Scow Mule and the Not Toddy, which cover the tiki, tropical, ginger and hot-drink positions between them. That is a bar treating Dry January as a menu-writing exercise rather than a marketing line, and it is why the venue keeps appearing in Louisville's zero-proof coverage.

    Planet of the Tapes

It also makes its own sodas in house — mango pineapple, raspberry pomegranate and lavender lemon — and names drinks with the same cheerful nonsense as the rest of the room, including the Shirley Temple of Doom and The Mangolorian. Shows and open mics run most nights until midnight, or 2am at weekends.

It doubles as an all-ages live music venue — shows run any night of the week — and the room holds a zine library, a rack of cassettes for sale and a standing commitment to local artists, which makes it function as a genuine third place rather than a shop with chairs. Alongside kava it pours teas, coffee and ginger kombucha, and blends smoothies with kratom, kava and CBD. Be clear on what that means: kava and kratom are alcohol-free but psychoactive, so this is a night out without alcohol rather than a guaranteed sober space.

The drinks programme is natural wine, Italian amari and a full bar, and — unusually for a room that specific about its wine list — it prints a non-alcoholic menu described plainly as being for designated drivers. The Chinotto Dream is the build regulars name, running on chinotto, the bitter Italian citrus soda that is the closest thing in the soft-drink world to an aperitivo. Service is nightly from 5pm.

A great mocktail isn't just a cocktail with the alcohol removed. The best non-alcoholic drinks are designed from the ground up around the flavor profile, mouthfeel, and ritual of a craft cocktail — without leaning on alcohol as a shortcut.

The signal: named drinks on a published menu, fresh-pressed juices, house-made shrubs or syrups, bitters and tinctures for complexity, and increasingly an NA-spirits section (Lyre's, Seedlip, Ritual, Wilderton, and others) used the same way a cocktail bar uses gin or whiskey. The opposite: an off-menu "we can make something" with no specific drinks, defaulting to soda, juice, or sparkling water.
