Chyna Club is an upscale Chinese restaurant and cocktail destination on level 1 of Fontainebleau Las Vegas, a concept from Wagamama and Hakkasan founder Alan Yau set adjacent to the casino floor and high-limit gaming area. Its beverage program, overseen by Director of Beverage Development Juyoung Kang, treats zero-proof drinks with the same culinary rigor as its full cocktails, using teas for tannin and umami, starches for mouthfeel, and oils that coat the palate. The signature non-alcoholic creation, "Heaven," is built from rice-water tea infusion, oleo-saccharum (citrus-infused sugared oil), fig jam and Supasawa, while "Made You Look" pairs jasmine pearl and green tea with cucumber and watermelon, taking its lilac hue from color-shifting butterfly pea tisane. Kang told Las Vegas Weekly that interest in mocktails has grown because "we raised the conversation and we raised their awareness, [so] people are more confident in ordering it." The restaurant is open evenings (typically Wednesday-Sunday, 5:30-9:30pm), with business-casual attire and reservations recommended.
