Coltivare

Coltivare is a garden-driven Italian restaurant in Houston's Heights neighborhood, opened in 2014 by award-winning chef Ryan Pera and partner Morgan Weber as the flagship of their Agricole Hospitality group, which also operates Eight Row Flint (Heights and East End) and EZ's Liquor Lounge. Known for rustic Italian cooking with a Gulf Coast perspective and produce from its own backyard garden, the no-reservations restaurant pairs its kitchen with a serious, long-running zero-proof program.

The dedicated "Zero Proof Cocktails" menu leans on Houston-made Cut Above zero-proof spirits alongside Lyre's and Seedlip, in named drinks such as the Not & Tonic (Cut Above zero-proof gin, elderflower tonic, grapefruit, lime, mint, green peppercorn), Et Tu, Brute? (Amaro Lucano Zero, Lyre's Italian Spirit, Topo Chico), and In the City (Seedlip 94, vanilla, cranberry, ginger), the last of which paired the restaurant with Sipple, a non-alcoholic bottle shop in Rice Village, for a past Dry January collaboration. As of the restaurant's January 2026 zero-proof lineup, the list also includes Il Rosmarino (cranberry, rosemary, black pepper), Silly Langtree (blood orange, ginger), Madame Pamplemousse (grapefruit, bay leaf), and Reset Spritz (raspberry, elderflower). Non-alcoholic beer and wine round out the list.

Coltivare was named "Best Mocktail List" in the Houston Press Best of Houston 2022 awards, recognized as an early adopter of zero-proof drinking in the city. The program has stayed active in the years since, with Coltivare's zero-proof menu featured in citywide Dry January roundups from both CultureMap Houston (January 2025) and Houston Press (January 2026), evidence of a sustained, multi-year commitment to the non-alcoholic list rather than a one-off seasonal gesture.
