CORK is the retail companion to Audrey Claire Taichman's Audrey Claire COOK demonstration kitchen, on South 20th Street near Rittenhouse Square, and opened in late 2020. Alongside more than a hundred and twenty hard-to-find wines, vermouths, ciders and bottled cocktails, it has assembled one of the Philadelphia region's largest non-alcoholic ranges and brands itself, without hedging, Dry Bar Headquarters.

A 2023 Philadelphia Inquirer feature put the figure at more than a hundred varieties of zero-proof stock, including Ritual Zero Proof spirits and Lyre's Aperitif Rosso. What matters as much as the number is where those bottles sit. This is a wine shop with a serious wine list, and the non-alcoholic range lives inside it rather than in a separate aisle — so choosing an alcohol-free bottle happens in the same conversation, with the same staff, as choosing a wine.

That conversation is the shop's actual product. The Inquirer quoted buyer Michelle Flisek's opening question to customers: what flavour profiles are you looking to enjoy? It is a small line and an unusually good one. Most non-alcoholic retail is organised around what a product replaces — the gin substitute, the wine alternative — which frames every purchase as a compromise against something better. Asking what someone wants to taste instead treats the category as a set of drinks in their own right, and it is a far more useful way to find something you will actually enjoy.

The pairing with the demonstration kitchen next door reinforces it. This is a shop attached to a place where people learn to cook, which means the staff think about drinks in relation to food, and an alcohol-free bottle chosen to go with a specific dinner is a different proposition from one grabbed off a shelf.
