Tucked up a staircase on the second floor of a Bukit Pasoh shophouse in Outram, Gibson is one of the Jigger & Pony Group's most enduring bars, a compact, low-lit room named for the dry martini garnished with a pickled onion. It has been a mainstay of Asia's 50 Best Bars, appearing across the 2016-2020 editions, peaking at No.14 in 2017 and holding the No.25 spot in 2020, and it is known for reimagining classic cocktails through Asian and locally sourced ingredients.
Under principal bartender Gregory Camillo, Gibson's rotating menus (recent editions include Chimera and the tenth-anniversary Timeless) devote a real, printed section to non-alcoholic drinks rather than treating them as an afterthought. Time Out Singapore singled the bar out in its guide to the city's best non-alcoholic drinks, noting the zero-proof list is illustrated with watercolour sketches of its ingredients so non-drinkers don't feel they are missing the full experience.
The headline pour is the Urban Farmer No.4 (S$18), part of a running collaboration with Edible Garden City, a Singapore agriculture collective that grows food in under-utilised urban spaces. This iteration is built around their locally grown cranberry hibiscus, giving the drink its autumn-hued colour and an unexpectedly tangy, citrusy palate. Alongside it, Gibson offers an alcohol-free Bloody Mary and zero-proof takes on its signature serves, making the NA offering a genuine parallel to the alcoholic menu rather than a token gesture.
