Latuli sits on Gaylord Drive in Memorial, and it is chef Bryan Caswell's room — a name that carries weight in Houston, where he has been one of the more visible chefs for well over a decade. The reason it earns a place in this directory is small but structural: the drinks menu has a heading that reads "Mocktails", printed on the same page as the cocktail list, and the two drinks beneath it are built on a zero-proof spirit rather than assembled from juice.
That distinction is worth spelling out because it is the difference between a real non-alcoholic drink and a soft one. The Ginger Spur takes Ritual zero-proof tequila as its base and lengthens it with ginger simple syrup, fresh orange juice and ginger beer — a build with two separate sources of ginger heat, one syrupy and one carbonated, which is what keeps it from reading as sweet. The Spring Saddle uses the same Ritual base against a strawberry chamomile preparation with lemon, lime and soda; chamomile brings a faintly bitter, hay-like note that does some of the work alcohol would otherwise do in stopping the strawberry from dominating.
Ritual is the default alcohol-free spirit in Houston bars by a wide margin, and its tequila expression is the one that translates best, because the smoky, vegetal character of agave survives the removal of ethanol better than a gin botanical does. A bar that reaches for it rather than for a bottled mixer is signalling that it expects someone to order these drinks and enjoy them.
The honest caveat is length: two drinks is a short section, and a group of non-drinkers will exhaust it in a single round. What compensates is the setting. This is a full restaurant with a serious kitchen and a dining-room service rhythm, open until eleven on Thursday, Friday and Saturday and until nine or ten the rest of the week, which makes it a place to have dinner rather than a place to drink. For an evening built around the table rather than around the bar, two well-made zero-proof options and a chef's menu is a more useful proposition than a long mocktail list attached to a mediocre kitchen.
