Plume opened July 26, 2024 at 1100 W 23rd St in the Urban Office–West Heights development, the debut project of Golden Ratio Hospitality Group — co-owners Ted Baker (previously of Bobcat Teddy's and Penny Whistle Pub) alongside Dan Braun and James Fitch of Braun Enterprises. Interior designer Bradford Collier of B.W. Collier Interior Design built out the Modern Deco, Hollywood-glam space — the bar's name references an ornamental arrangement of feathers, and the room carries peacock motifs, teal-and-gold finishes, and a climate-controlled patio. It sits in the Shady Acres pocket of the Heights, positioned by its owners as a more intimate, seated alternative to the sports-bar patios along nearby 20th Street.
Plume's own live menu carries a dedicated non-alcoholic cocktail section built on real zero-proof spirits: the Guava Glam Spritz (Seedlip Grove 42, guava, Giffard NA Apéritif, lemon, topped with grapefruit soda), the Tropic Daydream (Seedlip 42, Giffard NA Apéritif, mango, passion fruit, pineapple, topped with Angostura art), and the Matcha Mochi Sip (Ritual Zero Proof Whiskey, coconut matcha, honey, egg white). CultureMap Houston's Dry January coverage separately documented four additional $10 mocktails — the chai-infused cold brew After Glow, the citrus-and-coconut-cream Naked in Paradise, plus Raspberry Dreams and Matcha Palmer — indicating the zero-proof list rotates rather than holding to one fixed set of names.
Alongside the drink program, Plume runs a tapas-style small-bites menu — meatballs in chipotle ragout, bacon-wrapped dates stuffed with stilton, deviled eggs on avocado toast — plus weekly programming that includes Tuesday–Friday happy hour, a Wednesday birria-and-palomas special, a Thursday oyster night, and a Sunday DJ brunch.
