Night Hawk

Night Hawk is reached through Five Oars Coffee Roasters on Tanjong Pagar Road — you walk through the coffee shop to find it — and the room beyond is small, dim and almost always busy. The name and the fit-out both nod to Edward Hopper's Nighthawks, the 1942 painting of a late-night diner counter, and the design leans into that timeless, slightly cinematic register rather than chasing a trend. It is run by Peter Chua, a bartender with a long track record in Singapore, and it placed 77th on Asia's 50 Best Bars in 2025.

What makes it worth a non-drinker's time is structural rather than promotional. Night Hawk prices its non-alcoholic drinks as a standing menu line at S$22++, set against S$25++ for the alcoholic ones. That single fact does more than a page of mocktails would: it establishes that a zero-proof order is an ordinary transaction at close to full price, made with the same ingredients and the same labour, rather than a favour or a discount item. Bars that treat non-alcoholic drinks as an afterthought almost never price them this way.

Beyond the fixed list, the bartenders are comfortable producing non-alcoholic versions of drinks from the main menu and will build to a guest's preferences if you describe what you like. That kind of dealer's-choice flexibility is arguably more valuable than a printed list, because it means the ceiling on what you can drink is set by the bartender's skill rather than by a short section on a card. Two practical notes: the bar does not take reservations and is walk-in only, which is unusual in Singapore and means arriving early on weekend nights, and the room is genuinely tiny, so a large group will struggle.
