Registered in 2013 and run by Singaporean couple Julie and Stephen, Phoenix Hill Tea Merchant is that rare thing in Singapore: a tea house sourcing direct from a plantation the owners actually own. Their estate spans more than 100 acres in Shantou, Guangdong, in the Fenghuang (Phoenix Mountain) belt long regarded as the home of oolong. The business is primarily a wholesaler, but the Joo Chiat Place shop keeps a steady stream of local tea lovers coming for retail leaf and tasting.
The anchor is Feng Huang Dan Cong (Phoenix single-bush) oolong, brought straight from the Guangdong estate. The leaves are always charcoal-roasted in the traditional way, which the shop credits for the tea's distinctive aroma and taste, and poured gongfu-style at the counter. Around the Dan Cong sits a deep range of Chinese leaf: aged Pu-er, Da Hong Pao and other Wuyi rock oolongs, Anxi Tie Guan Yin, plus green, flower and red (hong cha) teas.
Tea tasting is available throughout opening hours, and Julie runs structured tea-appreciation courses in-shop for those who want to learn to read a Dan Cong the way a sommelier reads a wine. It is a wholly non-alcoholic room, and a corporate and team-building venue partner for food-tour operator Singabites since 2016. There is no cocktail list here and no Michelin or 50 Best plaque, just single-origin leaf, a charcoal roast, and the patience of a proper gongfu pour, which is exactly the point for a zero-proof afternoon in Katong.
