Rosalie Italian Soul is chef Chris Cosentino's Italian-American restaurant, which opened October 15, 2019 inside Downtown Houston's C. Baldwin Hotel (Curio Collection by Hilton, 400 Dallas St). Cosentino, also known for Cockscomb in San Francisco and Jackrabbit in Portland, Oregon, closed the restaurant early in the pandemic; it reopened on September 15, 2021.
The same printed menu that carries the restaurant's cocktail list also has a standing zero-proof section labeled Mocktails (repeated later as Rosalie Mocktails). It runs on Ritual Zero Proof's spirit alternatives: a Ritual Margarita (Ritual Tequila Alternative, fresh lime juice, agave nectar), a Ritual Espresso Martini (Ritual Rum Alternative, cold brew or espresso, simple syrup), and a non-alcoholic Jungle Bird (Ritual Aperitif Alternative, Ritual Rum Alternative, pineapple juice, lime juice, simple syrup), plus a fourth drink called The Black Tie that is listed without published ingredients.
