The Underground opened in April 2018 in the basement of The Mob Museum — formally the National Museum of Organized Crime and Law Enforcement — at 300 Stewart Avenue in downtown Las Vegas, and it is simultaneously an immersive Prohibition history exhibition, a working distillery and a speakeasy bar. Getting in is part of the exhibit: you look for the barrel, find the staircase behind it, and reach a door with a sliding peephole that requires a password, which the museum posts daily to its Instagram account. With the password, the bar can be entered free of the museum admission. Inside, surrounded by genuine 1920s artefacts, the bar pours period-accurate craft cocktails and the distillery's own award-winning moonshine, made on site.

What makes it unusually good ground for a non-drinker is that a room built entirely around the mythology of illegal alcohol has nonetheless committed to a real zero-proof list rather than a token gesture. Four named drinks sit on the official menu at $10 each: the Raspberry Lavender Fizz, The Test Pilot, the Pineapple Smash and the Sober Spritz. Beyond those, the bar stocks Heineken 0.0 non-alcoholic lager and a California non-alcoholic sparkling wine, and it runs a full coffee and espresso menu alongside shareable bites, which quietly makes it one of the easier places downtown to sit for an hour without ordering alcohol at any point.
