Cliff's Taphouse is a neighborhood bar and restaurant in Kansas City's Martini Corner, opened in 2021 by Larry Kime, a former manager of the South Plaza institution Nick & Jake's. It took over the former Ollie's Local space at 3044 Gillham Road, leaning on a dozen-plus local taps, scratch American food, and a deliberately inclusive, family-style atmosphere — the name honors a Chicago beat cop who "welcomed all into his world." The Sylvester is a Midtown Miami cocktail bar opened in April 2019 by Florida natives Ben Potts and Brian Nasajon, the duo behind Beaker & Gray. Set in the former Bardot space at 3456 N Miami Ave, it pairs vintage Miami décor — colorful retro wallpaper and repurposed antique furniture — with a craft cocktail program built on locally sourced ingredients, reopening in 2021 with a refreshed Florida-themed menu. The Underground is a Prohibition-era speakeasy and working distillery tucked into the basement of The Mob Museum (the National Museum of Organized Crime and Law Enforcement) in Downtown Las Vegas, complete with a secret side door whose daily password is posted to Instagram. One of Salt Lake City's oldest brewpubs — opened in Trolley Square in 1972 (originally "The Pub") and brewing its own beer on-site since 1995.
